Now that I went and got myself a job, my kitchen time has been drastically cut. I used to be in the kitchen all afternoon, pretty much, because it was a good distraction activity for LG. “Here, come play with these parsnip peels! No, don’t eat them! Ehh, who cares, just don’t jump off the couch again.”
While I still have most of the time to cook everyday, I just don’t have the mental brainpower to think about what to make for dinner every night, so when we’re not eating Chinese takeout (last night) (lunch today) (mid-afternoon snack later today), I have discovered an easy dinner alternative: The Sandwich.
We have been eating a lot of sandwiches, people. Behold!
The Sausage Sandwich!
I buy pre-cooked sausages (Aidell’s, which are local-ish and pretty natural as far as meat in tube form is concerned) from Costco and for this application, I roasted them on a pan along with peppers and onions and served with a ginormous salad.
The Mexican Sandwich!
Also known as a taco. Also known as delicious.
Is there any easier meal than a taco? No, no there is not.
The Greek Meat Sandwich!
I had a giant tub ‘o hummus that needed to be used and while I can very easily eat a tub ‘o hummus with just some carrot sticks or crackers or a large spoon, I thought for the sake of my health and those around me, it would be best to use the hummus in an actual meal. I made this chicken shawarma recipe from The Shiksa (full disclosure, I omitted the part where you cook it again — that seemed like a lot of work for something I was just going to drown in hummus ANYWAY) and it was really good and very easy. I served it with asparagus with feta on top, because if you put feta on it, it makes it Greek.
The BBQ Sandwich!
Well you can’t really see the sandwich-y part here, but oh well. Take meat, grill meat, put meat on bread, drown meat in BBQ sauce. I also made a potato salad with BBQ’d bacon in it because I love my arteries.
And that’s that! Sandwiches! Easy! What have you been cooking or slapping between two pieces of bread lately?
I would marry BBQ in a heartbeat should I ever find myself a widow.
I rock the sausage sandwich like it’s my JOB (that’s what she said?). Tell me more about this BBQ bacon potato salad. I LOVE POTATO SALAD. Dammit I’ve had too much coffee this morning.
Now I want a sandwich. Or maybe one of each of the above.
