Hummus and cheeses and all the things I cannot have

Maybe homemade hummuses (hummusi?) have been done to death, I do not know, but I feel like I always see Twitter asking for homemade hummus recipes, so I thought I’d share mine. Please note, I don’t use tahini. I tried tahini once and it scared me and while I’d be open to trying it again, I have found it’s not really necessary for my homemade hummus.

Hummus

Servings
This yielded enough hummus for a late Sunday snack for two people (who like to eat a lot), as well as leftovers for a couple of smaller snacks during the week.

What You’ll Need
1 15oz. can of garbanzo beans, drained and rinsed
1 clove of minced garlic
1 lemon, juiced
2-4 TBSP. olive oil
Whatever fancy filler your little heart desires — I used marinated artichoke hearts (about 1 cup), but you could used olives, roasted red peppers, or kick it old school with traditional hummus
Salt and pepper to taste

What You’ll Do
Super easy! Just whirl everything in a food processor or blender, adding more olive oil as needed to get all the garbanzo beans pulverized. Serve with veggies or pita chips or Greek-style chicken and cucumber salad or make your own shawarma — the possibilities are endless!

In semi-related news, Chris and I are doing the Whole30 starting this Friday (we wanted to wait until after our anniversary because what’s an anniversary if you can’t celebrate with wine or champagne or both, am I right?) So, this means no beans, no grains, no booze, no sugar, NO CHEESE for the next 30 days. THE CHESSES! WILL NO ONE THINK OF THE CHEESES?!

I’m actually looking forward to it — as much as one person can look forward to self-imposed torture (THE CHEESES). I was talking to a friend of mine recently and she was like, “I am so sick of being tired all the time. I eat healthy, I get enough sleep, I work out regularly…WHY AM I SO EXHAUSTED?!” and I was, “Choir, preached to, sister.” So, I’m hoping once we get past any initial feelings of death and wanting to kill someone/something, then maybe I’ll be so rested, I can run through the alps singing songs and making dresses out of curtains or something. We’ll see.

The Whole30 ends the day before the half-marathon which is sort of perfect timing (hello, post-race brunch and Bloody Mary!) I am ever so slightly concerned about training for a long-distance race while eating very strictly, but at the same time, no pain no gain, right? (I basically am just a really poor planner, but whatever! Cheers (with glasses of water and lime)!

    YOU ARE STARTING JUST AS I FINISH CIRCLE OF LIFE, ETC. I will tell you right now that my curtain-dresses turned out terrible.

    In lieu of bean-filled hummus, I’ve been making BEET hummus. Google it. It’s delicious, and if you eat enough of it your pee turns pink! ;o)
