Passover and Easter menus

Both Passover and Easter are happening this weekend, which means my mind is all, “FOOD MUST MAKE FOOD FOOOOOOD.” This happened with Christmas and Hanukkah last year; I remember being stressed about how I was going to make both a Hanukkah brisket and a Christmas roast in the same week. Eh, I’m just going to blame all this on the Mayans.

Anyway! Passover! Here’s what we’re having:

– Matzoh ball soup with chicken

– Latkes (not kosher, but whatever, LATKESSSSSS)

As for Easter, while most people make ham and potatoes, I make Mexican food. We began doing the Mexican-food-on-Easter five years ago at a joint in San Diego and so it shall now be a tradition forevermore. Here’s what I’m making:

– Tamales (I need to find a tamaleria because the one I was going to order from is closed)

– Refried beans (it should go without saying these will be homemade — no can-opening here, not that there’s anything wrong with that)

– Flank steak with a chimichurri sauce

– Homemade salsa and guacamole

I don’t really do desserts, but I never did make matzoh roca for Hanukkah, so I might go that route. Or maybe I’ll just have an extra latke or twelve. We’ll see.

As for the drinks, earlier today, I randomly felt like I’d just eaten a mint leaf and it was then I had an epiphany: MOJITOS!

Unrelated-ish but not, here’s a little preview of the kitchen redo. It’s AAAAALL HAPPENING.

Kitchen cabinet redo
Only a billion more cabinets to go

    FOOOOOD! LATKESSSS!!! JEALOUS!!!!!

The cabinets are looking great – can’t wait to see it when it’s all done! Your little spice thingie (technical term) is adorable.

OMG — the cabinets are AMAZEBALLS (god I hate that word and can’t stop using it in moments of weakness.) I’m inviting myself over when it is done. For research purposes, of course. 🙂

We used to get tamales from a little hole in the wall out in Wheatland, but they changed ownership and now totally blow. I’m in the same boat with no local source, however we made them from scratch two years ago and even though it was a bit tedious it was not very hard (which surprised me.) Probably not the project you want to take on like right this second, but WORTH IT at some point, I’ll tell you what!

    Yum, now I’m hungry.

  3. GIMME A LATKE. Love them with a side of applesauce. Yummmmm.

  4. I would like to join you for Easter please and thank you.

Also, I LOVED this bit: “I randomly felt like I’d just eaten a mint leaf” It made me giggle but I know EXACTLY what you mean. I get those random tastes in my mouth sometimes and it’s exactly as you describe.
