Meal planning when you ain’t got none food

Last week, as I mentioned, Chris was out of town, which meant I planned zero meals. I did eat beans at least twice a day, every day, which resulted in a rumbly tum by Friday night, but at least I got all my fiber for the next month.

This weekend, we desperately needed to make a trip to Costco, but between Chris getting home at midnight on Friday and then making the trek into San Francisco to see some favorite cousins on Saturday, we had no time.

But! I kind of like the challenge that comes with having no food in the house. What yummy things can we create out of very little?

Some people like physical challenges, some people like logic challenges, I like food challenges. Joey Chestnut, watch out!

Anyway, here’s what’s on the menu for this week; links to some recipes are below.

Meal plan

Tonight is burgers and fries using this recipe found via Food Lush.

Tomorrow night’s baked egg boats also come via Food Lush.

Wednesday is this recipe for gnocchi, cannellini beans, and Swiss chard (although I’m using kale.)

Thursday will be some sort of Asian-y marinade, probably coming from Holly, Chicken Thigh Advocate.

Friday is the same recipe for dough that I mentioned a couple weeks ago. It was very good and I even used some of the leftover dough to bake into bread (think focaccia, I guess?) which we used for pasta-dipping later that weekend and also as bread for a sandwich.

And about that pasta! I made homemade ricotta which I stuffed into manicotti and it. Was. Awesome. I followed a random recipe I found online, but Chef Chatty Cricket later gave me her recipe via Twitter, so I plan to use that one next time. I’ll report back!

    I want to try that gnochhi recipe! I do not understand why it only got a 3 star rating tho, hmmm. Sounds really tasty to me!
